The Mediterranean Diet and Salice Salentino
We’ll meet at 18:00 (06:00 PM) in Lecce’s main square and have macro-cum-micro talk about Puglia and the Salento and why the latter has the diet recognized as among the healthiest on earth. We’ll discuss those elements and why the former food-ways of the local poor is now how the well-educated, well-travelled around the world desire to eat today. We’ll head to the market to see those elements in sitù, and discuss each.
We’ll walk the gorgeous historic centre of Lecce back to the school, where we’ll make fresh pasta from scratch. We’ll discuss the elements such as legumes, extra virgin olive oil and green vegetables.
You’ll learn and prepare a 4 course meal and we’ll sit down to a chalkboard talk on Southern Italy’s great break away success, Salice Salentino. We’ll blind taste 3 and then segue into dinner, which will go long.
And as with all of our courses, you’ll be given access to all of our recipes in Bis, the password protected part of our site.
