Just when we think we understand who comes to our school and why (54 countries and counting, by the way), there is a new twist: a week-long destination birthday party.

‘I knew I wanted to do something big for my 60th, and Italy always tops my list’, says Jan from Colorado. ‘I decided, put it out there to my friends and 8 said ‘yes’ within a week’.

‘A good friend of mine has been to the school 8 times and highly recommended it. It sounded good and we booked it all in a few emails’, she says. ‘I’d say that it’s been the vacation of a lifetime but we’re coming back for the bicycle course. Now THAT will be the trip of a lifetime’.

Silvestro Silvestori, the owner, founder and director of The Awaiting Table Cookery School, Lecce, Italy has been teaching the food and wine of Puglia and particular- Italy’s Salentine peninsula since 2003.

In addition to his knowledge of Pugliese food and culture, Silvestro is a nationally-certified sommelier in Italy, and a staff writer for Wine & Spirits magazine, covering all their Southern Italian food and wine content. He has also appeared on American, Australian, Belgian, British, Chinese, Dutch and Italian television, and Italy’s most respected newspaper called him, ‘A national treasure’, and ‘THE anthropologist of the traditional cuisine of the Salento’ for his work in preservation and promotion of Salentine’s food and wine.
