Because Southern Italian wine isn’t a hobby for us, it’s who we are.
The school’s owner, your teacher, Silvestro Silvestori, is nationally-certified sommelier here in Italy, (AIS 2010). Silvestro also makes wine each year, closing the school for a few months so that he may bicycle around the Southern Italian wine country; making, tasting and discovering new wines to share with students.
He’s also a wine journalist, in both English and Italian, writing and photographing features regularly for Wine & Spirits magazine.
