The foods that you'll make and eat at our cooking vacation in Italy depend on the season and the market, which, like all good food, is the way it should be. Still, there are dishes that are so emblematic of the la cucina salentina that they are standards, dishes that we make every week, albeit often altering to fit the climate and seasonal produce.

What follows, are two world-famous recipes that you can follow at home before you come to our cooking class in Italy, followed by the list of the standard dishes, that are important enough to be considered cornerstones of the local kitchen.
Both are excellent!
Le orecchiette con le cime di rape.
This is a variation on perhaps the most famous Pugliese recipe of all, using both semola AND barley.

In essence this is a master recipe for Limoncello, Arancino, Mandorinello and on, any of the syrupy sweet digestive drinks composed from le bucce, or peels of citrus fruits. |
